PROGRESS TOWARDS SELF-SUFFICIENCY

Folkstart.org is a place where we share our learnings and document our journey towards healthier living and self-sufficiency. The following lists the foods and household needs that we are able to produce ourselves, as well as what we are looking to do or learn next!

FOOD PRODUCTION

  • Spices/condiments: herbs (rosemary, thyme, oregano, basil, mint, lemongrass, tarragon, lemon balm), honey, vinegar.

  • Drinks: kombucha, kefir*, herbal teas, chicory and dandelion “coffee”, water (collected in rain barrels).

  • Preserved foods: sauerkraut, kimchi, canned vegetables, dehydrated vegetables.

  • Harvested foods - focused on hearty perennials, self-seeding annuals or “cut and come again” varieties where possible: Kale, chard, sweet potatoes & leaves, wild arugula, red sorrel, mache, shiso, sunchokes, tomatoes, potatoes, cucumbers, okra, strawberries, berries (mulberry, chokeberry, blueberry, lingonberry, elderberry, kiwiberry), garlic

  • “Medicinal” foods: honey garlic, tinctures (mushrooms, echinacea, elderberry).

*Denotes items that currently requires purchased ingredients, such as milk, sugar or salt.
